Ingredients

  • 2 c sugar
  • 1 c unsalted butter
  • 6 bananas, ripe & mashed
  • 4 eggs, large & well-beaten
  • 2 1⁄2 ct cake flour
  • 1⁄2 t vanilla
  • 1⁄2 t banana extract
  • 1 t salt
  • 2 t baking soda

Instructions

Cream butter and sugar. Add bananas and eggs. Mix dry ingredients together. Blend liquid and dry ingredients. DO NOT OVERMIX!

Put into 2 greased, floured loaf pans and bade for 50 to 60 minutes.
