Description

An irresistible chocolate cookie.

Ingredients

  • 1⁄2 lb semisweet chocolate
  • 3 oz unsweetened chocolate
  • 1⁄2 c butter (1 stick)
  • 3⁄4 t instant coffee
  • 3 eggs
  • 1 c brown sugar
  • 1 c flour, unbleached
  • 1⁄2 t baking powder
  • 1⁄4 t salt
  • 2 t vanilla
  • 1 1⁄2 c chocolate chips

Instructions

1. Preheat oven to 325 degreess.

2. In a double boiler, melt together the semisweet and unsweetened chocolates, butter and coffee.

3. Meanwhile, beat eggs and brown sugar together until light in color and thick.

4. Sift together flour, baking powder and salt.

5. Let chocolate mixture cool slightly and whisk into eggs and sugar. Stir in vanilla and gently fold in dry ingredients. Stir in chocolate chips.

6. Drop by tablespoon onto a greased cookie sheet and bake for 12-15 minutes.

7. Cool on a wire rack.
