Shrimp Scampi with Linguini

Description
Very nice, quick shrimp dish with a nice kick.
Ingredients
- 1 oz linguini
- 4 T butter
- 4 T extra virgin olive oil
- 2 shallots, finely diced
- 2 clv garlic, minced
- red pepper flakes
- 1 kg shrimp
- kosher salt and freshly ground pepper
- 1⁄2 ct dry white wine
- 1 lemon
- 1⁄4 c parsley, finely chopped
Instructions
1. Boil the linguini in a pot of boiling water with 2 tablespoons salt and a dash of oil.
2. In a large skillet, melt 2 tablespoons olive oil over medium-high heat. Saute shallots, garlic and the red pepper flakes until the shallots are translucent - about 3 to 4 minutes.
3. Season the shrimp with salt and pepper; add them to the pan and cook until they have turned pink - about 2 to 3 minutes. Remove the shrimp from the pan, set aside and keep warm.
4. Add wine and lemon juice and bring to boil. Add 2 tablespoons butter and 2 tablespoons oil. When the butter has melted, return the shrimp to the pan along with the parsley and cooked pasta. Stir well and season with salt and pepper to taste. Drizzle over a bit more olive oil and serve immediately
