Description

Crisp, creamy, potatoes may an excellent complement to any beef or chicken dish

Ingredients

  • 5 yukon gold potatoes
  • 4 T olive oil
  • 1 T sea salt

Instructions

1. Preheat oven to 400 degrees. (Convection setting is best.) Take 2 tablespoons oil and spread over jelly roll pan. Put pan into oven.

2. Use medium-sized potatoes. Boil 4 quarts water.

3. Cut potatoes into 1/4 inch slices. Drop into water and boil for 5 minutes.

3. Drain and rinse potatoes. Put potatoes into a bowl, add other 2 tablespoons oil, and salt. Mix to spread oil and salt evenly.

4. Put potatoes onto jelly roll pan in oven. Bake until crisp, turning them over to brown on both sides. About 18 minutes.
