These muffins have no sugar and very little but are moist and tasty. You can substitute the apple sauce with other sauces such as peach, mango, etc. This is a great recipe for diabetics.
1. Preheat over to 350 degrees. Grease a 12 cup muffin tin.
2. In a large bowl, stir together the flour, Splenda, baking power, baking soda, cinnamon, and 3/4 cup of the walnuts.
3. In a separate bowl, mix together the eggs, mashed bananas, and applesauce.
4. Combine the wet and dry ingredients and mix until just blended.
5. Evenly fill all the muffin cups. Top with the other 3/4 cup nuts.
6. Bake 15-18 minutes until the top springs back gently when touched. Allow muffins to cool in the pan before removing them.
