Southwestern Fusion Spicy Israeli Salad

Ingredients

  • 1 cup cherry tomatoes, diced
  • 1 English cucumber, diced
  • 1 large dill pickle, diced
  • ½ medium red onion, diced
  • ½ cup cilantro, chopped
  • 1 sprig mint, chopped
  • 2 jalapeños, diced
  • 1 lemon, juiced
  • 2 tablespoons olive oil, EVOO
  • Pinch of salt and pepper

Directions

  1. In a medium metal bowl, combine all ingredients and mix well.
  2. Refrigerate at least 1 hour before serving to allow flavors to meld.
