Ingredients
- 1¼ ground chicken
- 1 clove garlic, minced
- 1 cup panko bread crumbs
- 1 large egg
- 1 tablespoon taco seasoning
- 1 teaspoon kosher salt
- 1 teaspoon Tabasco sauce
- 4 tablespoons olive oil, divided
- 1 onion, sliced in thin slices
- 1 red pepper, cut in thin strip
- 1 green pepper, cut in thin strips
- 1 lime, juiced
- 1 ounce Tequila
- 1 cup sour cream
- 1 cup guacamole
- 4 hamburger buns
Directions
- Place ground chicken in a metal bowl. Add garlic, bread crumbs, egg, seasoning and Tabasco, mix to combine. Form 4 patties. Set aside in refrigerator for 15 minutes.
- In a medium-sized skillet over medium-high heat, add olive oil. When hot, add onion and both peppers. Sauté until tender, about 10 minutes. Place in metal bowl, cover and set aside to keep warm.
- Add olive oil to the skillet. When hot, cook chicken burgers 5-6 minutes on each side. Remove burgers to a plate. Return vegetables, cook 1 minute then add the lime juice and tequila.
- Assemble burgers by placing a spoonful of guacamole on the bottom bun, add the chicken burger, and then add the sautéed vegetables. Top with sour cream and the top half of the bun.
