Ingredients
- 1 cucumber, peeled, seeded and diced
- 1 large avocado, diced
- 1 large tomato, diced
- 1 green pepper, diced
- 1 red pepper, diced
- 1 cup celery, diced
- ¼ green onions, sliced
- ¼ white wine
- ¼ cup red wine vinegar
- 2 cups beef broth
- 1 28-ounce can crushed tomatoes
- 1 tablespoon fresh cilantro
- 1 teaspoon salt
- ½ teaspoon pepper
- ¼ teaspoon Tabasco
- Croutons (optional)
Directions
- In a large non-reactive bowl, mix together all the ingredients.
- Cover and refrigerate overnight.
- Serve in soup bowls. Add croutons if desired.
