Avocado Gazpacho Soup

Ingredients

  • 1 cucumber, peeled, seeded and diced
  • 1 large avocado, diced
  • 1 large tomato, diced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 cup celery, diced
  • ¼ green onions, sliced
  • ¼ white wine
  • ¼ cup red wine vinegar
  • 2 cups beef broth
  • 1 28-ounce can crushed tomatoes
  • 1 tablespoon fresh cilantro
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon Tabasco
  • Croutons (optional)

Directions

  1. In a large non-reactive bowl, mix together all the ingredients.
  2. Cover and refrigerate overnight.
  3. Serve in soup bowls.  Add croutons if desired.
