Ingredients
- 1 cup cherry tomatoes, diced
- 1 English cucumber, diced
- 1 large dill pickle, diced
- ½ medium red onion, diced
- ½ cup cilantro, chopped
- 1 sprig mint, chopped
- 2 jalapeños, diced
- 1 lemon, juiced
- 2 tablespoons olive oil, EVOO
- Pinch of salt and pepper
Directions
- In a medium metal bowl, combine all ingredients and mix well.
- Refrigerate at least 1 hour before serving to allow flavors to meld.
