Thick & Fudgy Chocolate Chip Cookie

Ingredients

  • 1 cup unsalted butter, room temperature
  • 1½ cups granulated sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • 3 tablespoons strong coffee
  • 2⅔ cup all purpose flour
  • ½ cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups chocolate chips

Direction

  1. Preheat oven to 350 degrees.
  2. With a mixer, cream the butter, sugar, and vanilla until creamy and fluffy. Add the eggs and mix until just incorporated.
  3. In a separate bowl, combine the flour, cocoa powder, baking soda, and salt. Add the flour mixture to the butter mixture and mix until incorporated.  Then gradually add the coffee. The dough should be thick and sticky, but dry to handle.  If it’s still too sticky, add a little more flour. Stir in the chocolate chips.
  4. Roll the dough into even balls  and place on a parchment lined baking sheet. Bake for 8 minutes.  When done transfer to a cooling rack. They will look underdone and puffy but will turn out perfectly soft, thick and fudge when cooled.
